Blue Butterfly Pea Fantasy Chia Seed Pudding Recipe
4 tbsp chia seeds
1 cup cashew mylk
1 tsp Galaxy Blue (Butterfly Pea Powder)
1/2 tsp vanilla extract
1 tbsp maple syrup
1/4 cup oats
1/8 cup shredded coconut
1/8 cup puffed rice ⠀
For Blue Butterfly Pea Chia
Mix 2 tbsp chia with 1/2 cup cashew mylk and 1/2 tsp Butterfly Pea Powder.
Stir well and leave to thicken for at least 30 mins in the fridge- stirring half way through to break up any lumps. ⠀
For Chia Oats
Mix 2 tbsp chia with 1/2 cup cashew mylk, maple syrup, vanilla and oats.
Stir well and leave to thicken in the fridge. ⠀
For Blue coco sprinkles
Add shredded coconut, 1/2 tsp blue butterfly pea and a tiny bit of water to your food processor and pulse briefly to combine. ⠀
To assemble, layer blue chia pud, vanilla chia oats, blue coco sprinkles and puffed rice. Top with blueberries.
